Two weeks ago I started a new full-time job. YAY! I am very thankful for a new opportunity of employment. Hey, the USA economy must be improving if a corporation offers a 52 year old American women full-time employment! I'm feeling hopeful and very blessed.
I am also pleased to see the company cafe offers a nice salad bar with plenty of vegan options. They have a choice of mix greens, spinach, and/or romaine lettuces and then a wide selection of veggies, beans, olives, and seeds. I top mine off with a tangy balsamic dressing. They do offer tofu. However, I have to say I'm just not that into tofu yet. It doesn't have much taste and I don't know how to prepare it. My son says I don't even know how to pronounce it.
They also provide microwaves. Therefore, I make up a huge batch of pasta on Sunday night, enough to get me through most of the week. Good thing I'm a creature of habit. I do not get tired of pasta with salad 4 days in a row. But by the 5th day, I like to get out. This Friday, I went to a local Indian restaurant. The Indians understand vegan! For many, it is part of their culture to eliminate dairy and meat certain times during the year/month. They always have vegan options, and they are mouth watering delicious!
With a little preparation, it is not that difficult to be a vegan at work.
